- 50g butter
- 100g brown sugar
- 1 teaspoon ground cinnamon
- 4 bananas (cut in half length-ways and again width-ways to make 16 pieces)
- 120ml dark rum
- 4 scoops good quality vanilla ice cream
How to make
Weigh out the butter, sugar and rum for the dessert and put to one side, as the dessert must be prepared immediately before it is served.
When the main course has been eaten, make the Bananas Foster. Combine the butter, sugar and cinnamon in a frying pan and heat gently until the sugar is dissolved. Stir in half the rum and add the bananas. Heat up the remaining rum in a small pan or microwave. When the banana pieces soften and start to brown, carefully add the warmed rum. Tilt the pan and ignite the rum. When the flames subside, put scoops of ice-cream in four bowls, top with the banana pieces and ladle over the remaining sauce. Serve immediately.
