Village rice pudding with cinnamon and aniseed


  • 300g ground rice (or pudding rice if not able to obtain ground rice)
  • 350g granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground anise seed
  • 1 tablespoon unsalted pistachios (finely ground)

How to make

Pour 1.2 litres/2pints of water into a heavy-based pan and bring to the boil.

Step 2

Reduce the heat and beat in the ground rice (or pudding rice), sugar, 1 tablespoon cinnamon and 2 teaspoons ground anise seed stirring all the time to make sure the mixture is well blended and smooth.

Step 3

Simmer gently for about 15 minutes (longer maybe needed if using pudding rice) until the mixture is very thick.

Step 4

Tip the mixture into individual serving bowls and leave to cool and set. Sprinkle the ground pistachios over the top of each rice pudding when ready to serve.
