Ingredients
- 1 green pepper (deseeded and cut into approx. 1cm dice)
- 1 red pepper (deseeded and cut into approx. 1cm dice)
- Half cucumber (deseeded and cut into approx. 1cm dice)
- ½ red onion (peeled and finely diced)
- 4 plum tomatoes (cut into approx. 1cm dice)
- 1 medium red chilli (deseeded and very finely chopped)
- 1 clove garlic (peeled and crushed or very finely chopped)
- Small handful of fresh coriander leaves (chopped)
- 2 tablespoons sunflower oil
- Zest and juice of 1 small lime
- 1 tablespoon of red wine vinegar
- Salt and pepper to season
How to make
Step 1
In a large bowl combine the onion, peppers, cucumber, tomatoes, garlic and coriander. Add the chilli and mix thoroughly. Season with salt and pepper. Put the lime zest and juice, sunflower oil and red wine vinegar into a small bowl. Whisk together to make a dressing. Set both bowls aside until ready to serve.
